{"id":264,"date":"2015-11-29T17:32:45","date_gmt":"2015-11-29T16:32:45","guid":{"rendered":"http:\/\/trufgourmet.com\/en\/?p=264"},"modified":"2023-11-10T13:16:17","modified_gmt":"2023-11-10T12:16:17","slug":"recipe-risotto-with-boletus-and-black-truffle","status":"publish","type":"post","link":"https:\/\/www.trufgourmet.com\/en\/recipe-risotto-with-boletus-and-black-truffle\/","title":{"rendered":"Risotto with boletus and black truffle"},"content":{"rendered":"<h5><strong>Ingredients:<\/strong><\/h5>\n<ul>\n<li>250 g of rice<\/li>\n<li>200 g of boletus<\/li>\n<li>1 l. vegetable stock<\/li>\n<li>\u00bd onion<\/li>\n<li>2 cloves of garlic<\/li>\n<li>3 tablespoons of virgin olive oil<\/li>\n<li>1 tablespoon of butter<\/li>\n<li>50 g Parmesan cheese<\/li>\n<li>100 gr. black truffle<\/li>\n<\/ul>\n<h4>\u00a0<\/h4>\n<h5><strong>Preparation:<\/strong><\/h5>\n<ol>\n<li>Heat the virgin olive oil and the tablespoon of butter in a frying pan.<\/li>\n<li>Cut the onion and garlic into small pieces and poach them.<\/li>\n<li>Heat the vegetable stock in a saucepan, which can be made in advance or bought ready-made.<\/li>\n<li>Add the sliced porcini mushrooms to the pan and leave to cook for 3 or 4 minutes.<\/li>\n<li>Then add half the stock and the rice, a little salt and fry for a few minutes, gradually adding the rest of the vegetable stock and stirring gently.<\/li>\n<li>Leave to cook for 10-12 minutes over a medium heat, stirring gently.<\/li>\n<li>Add 2\/3 of the grated truffle and stir all the ingredients together.
