Ingredients for 2 servings
  • 200 g rigatoni pasta
  • 30 g butter
  • 20 g fresh black truffle (Tuber Melanosporum)
  • 40 g grated Parmesan cheese (plus extra for serving)
  • 2 tablespoons cooking cream or heavy cream (optional, for added creaminess)
  • Salt and freshly ground black pepper
  • Pasta cooking water (reserve ½ cup)
Preparation
  1. Cook the pasta
    Boil the rigatoni in plenty of salted water until al dente, following the package instructions. Reserve ½ cup of the cooking water and drain the rest.
  2. Prepare the truffle base
    In a large pan, melt the butter over medium heat. Turn off the heat, then grate a bit of truffle over the melted butter.
  3. Add the pasta and cheese
    Add the drained rigatoni to the pan and mix. Stir in the grated Parmesan and a splash of the reserved pasta water to create a silky sauce. If you prefer a creamier texture, add the cream at this stage.
  4. Season to taste
    Season with a little salt (the Parmesan is already salty) and freshly ground black pepper.
  5. Shave truffle and Parmesan on top, then serve
    For an elegant finish, shave thin slices of truffle over the pasta, add more Parmesan, and serve hot.
