Salmon canapé with truffle mayonnaise

Canapés are a popular dish for lunches or dinners with friends and family. They are an appetizer served as a prelude to main courses or they are also ideal for a more informal evening where you can enjoy small, delicious bites, drink a good wine or beer and chat with your guests. In such an environment, truffles are the perfect ingredient to give a glamorous and exquisite touch that will undoubtedly surprise your guests.

 

 
Ingredients for 6-8 people:
  • 200 g smoked salmon, sliced
  • Toasted bread
  • 20 g fresh Tuber Melanosporum truffle
  • 1 egg
  • 150 ml sunflower oil
  • 50 ml olive oil
  • 100 g crab sticks
  • ¼ teaspoon salt

 

Preparation:

Truffle and egg form a perfect combination that enhances the flavour and aroma of the truffle. The flavour of this dish will gain in intensity if we prepare the truffle mayonnaise a few hours in advance and leave it to rest in the fridge before using it.

  1. For the mayonnaise: To make the mayonnaise, place the ingredients (egg, oil, salt and truffle) in the blender and blend little by little until smooth. Leave to stand for a few hours if possible. If you find it easier, you can also grate the truffle beforehand.
  2. Open the salmon packet to allow it to cool and make it easier to slice.
  3. Chop the crab sticks and mix them with the truffled mayonnaise. Spread the mixture on the toasted bread with a spoon. Place on one or more trays.
  4. Place the salmon on top of the canapés and, if desired, add a little more truffled mayonnaise for decoration.

This recipe can also be made without the crab sticks. Truffle mayonnaise can be combined in many ways, so try it with other ingredients, because it’s a sure hit!
